Easy Pesto

Fresh pesto is so easy, it is hard to justify buying something store bought. Here is the recipe I use. I sub walnuts for pine nuts because I prefer the flavor, plus the nutritional boost of plant-based omega-3 fats, along with high amounts of copper, manganese, molybdenum, and biotin. Good antioxidants, and good for the brain! 
 

Ingredients:

Fresh organic basil (about 2 cups)
Olive oil to taste (it will seem like you are using a lot. Don't worry, it tastes better and makes the pesto go further)
Squeeze of fresh lemon
Fresh grated parmesan cheese
Salt and pepper
Toasted organic walnuts (again, to taste. I use about a cup. Toasting them brings out more flavor)

Directions:

After you rinse the basil, place all ingredients in a food processor. Blend until smooth. Add more olive oil as you go to reach a nice viscous consistency.  Enjoy with pasta, on bruschetta, with roasted veggies....or sometimes a spoonful by itself ;)
